Chocolate Covered Coconut Frozen Yogurt Bars

  • 2 cupsFrozen Coconut Chunks
  • 1 cupPlain Greek Yogurt
  • 1/2 cupAlmond Milk (or other milk of your choice)
  • Optional1/2 tsp Stevia (if you like sweeter things)
  • 1/4 cupToasted Coconut
  • 1 cupDark Chocolate Chips
  • 3 TCoconut Oil

Directions:

In a food processor or blender, pulse coconut chunks until well chopped. Add the greek yogurt, almond (or other) milk and stevia if using and blend until well combined. Lastly, stir in the toasted coconut.

Divide the mixture among 6 popsicle molds and freeze at least 4 hours or overnight.

Remove the popsicles from the freezer a few minutes prior to serving so that they will be easier to remove from the molds. During this time, make the chocolate coating. In a microwave safe bowl, combine the chocolate chips and coconut oil and microwave for 20-30 second intervals, stirring in between until fully melted and combined. Set aside.

Gently remove the popsicles from the molds and one and a time dip into the chocolate coating (if bowl is deep enough) or generously spoon chocolate over all sides of the pop. Wait a few seconds for the coating to harden, then place on a piece of parchment paper and repeat with the remaining pops.

Serve immediately or wrap gently in parchment and return to freezer until ready to eat.
